Easy and Healthy Work At Home Lunch Ideas

When you work at home, lunch time can be a simple as getting up from your desk and walking across the room to your kitchen refridgerator.  But the big decision still looms…what are you actually going to eat for lunch?  With your whole kitchen at your disposal, it can be easy to get overwhelmed and we sometimes take too much time thinking about what we’re going to have for lunch. Here are some tips and ideas to keep this daily decision making process in check. 

Prepare Basics Ahead of Time

If you want to take the hassle out of your at home lunch time, you’ve got to be willing to put some time in up front.  Sunday afternooons are a good opportunity to meal prep for the week, whether it’s for your lunch or the family dinner.  With the right ingredients prepped, cooked and ready to go, you can have a healthy and easy lunch put together in no time.  We like keeping grilled chicken breast, roasted vegetables, sliced cucumbers and tuna salad on hand – but the possibilities are just about endless.  Clear plastic or glass reusable containers can help you organize your ingredients and choose the right items when your stomach starts growling.

Sandwiches, Salads and Wraps

Now that you’ve got your basics together, putting together an actual meal is easy.  From a chicken pesto sandwich to a roasted veggie and tuna salad wrap, you can have your lunch ready to go in no time. Keep a big bag of fresh greens on hand to make a good base for your salad, or add a handful of greens to bring some freshness to your sandwich or wrap.  Get as creative as you’d like mixing it up with putting your toppings on a croissant or even adding some healthy fat with slices of avocado.

A Healthy Side Dish or Snack

Some days, the sandwich or salad just doesn’t seem like enough on its own.  The temptation might be to reach for a handful of chips or a few scoops of ice cream from your freezer.  While there’s nothing wrong with these treats occasionally, there are other options that can satisfy and still be nutritious.
